WHere is an easy version of a drink featured on our latest cocktail list. This is a batch premix that's bursting full of flavours of a Christmas time, which makes it excellent for hosting a celebration. Save the extra citrus syrup for morning drinks, desserts, or for more rounds of this cocktail.

Yields 10 people
To make the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Premix (yields 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Instructions
Making the Syrup: Put the listed items inside a pan, heat until it reaches a simmer, mixing until the sugar dissolves. Then, remove from the burner and leave to cool completely. Pour into an sealable bottle, seal keeping it in the fridge, where it will keep for around four weeks.
To make Premix: Pour all the liquid ingredients into one sizeable container, leave to sit for an hour, then filter it best through a fine cloth, so it's fully clarified.
When ready to serve: Pour 85ml of your batch mix into a mixing glass filled with ice, and stir gently for a minute until cold. Filter to a chilled martini glass or a similar vessel, top with some cranberries and finish with a brief mist of mandarin oil over the top.
